This is a such a fresh accompaniment to a pork chop – a summery spin on 'meat and two veg'. The caraway seeds introduce beautiful, liquorice flavours and then with the sharp crunch of the apples, it’s all you need as a side.
Serves 4 – 6
1 lemon, juiced
4 tbsp mayonnaise (we love Dr Will’s Classic Mayonnaise)
1 small white cabbage
1 green chilli
6 spring onions
3 gala apples
2 - 3 tsp caraway seeds
Stir together the lemon juice and mayonnaise in the bottom of a large mixing bowl.
Shred the white cabbage as thinly as you can. Thinly slice the green chilli, spring onions and parsley, and then cut the Gala apples into thin batons. Put everything in the mixing bowl, sprinkle over the caraway seeds and then toss everything thoroughly.
Serve a big mound with a pork chop – and enjoy!
