Cooking with spices needn't feel like alchemy and hopefully this quick dish proves that. It couldn't be simpler. There are just four ingredients: spaghetti, olive oil, garlic ... and Rooted House Blend, which turns the oil a deliciously deep red and introduces a sensational chilli kick. Perfect for a day when you don't want to spend more than 15 minutes in front of the stove.
4tbsp olive oil
3-4 garlic cloves, crushed
2tsp Rooted House Blend
Cook the spaghetti as per pack instructions (usually 10-12 minutes in a pan of boiling water, with a pinch of salt).
Meanwhile, heat the olive oil in a separate pan and start to cook the garlic cloves on a gentle heat. After a couple of minutes they should be fragrant -- but not crisp or brown. Take the pan off the heat and stir in the House Blend.
Roughly drain the pasta (EG tip it briefly in and out of a sieve so there's still moisture attached to the spaghetti strands, rather than tossing it or trying to get the spaghetti bone dry). Add it to the pan with the chilli and garlic oil. Toss through the sauce until it's coated and serve straight away.
