I first fell in love with manoush (also known as manakish) when living in the Middle East, where I would eat these Lebanese flatbread pizzas for breakfast, lunch or dinner! Manoush can be topped with cheese or meats but our favourite is the fragrant Za'atar topping (egg optional!). You could make your own flatbread (see Ottolenghi's recipe, for example) but to save time we cheat and use shop-bought flatbreads or pita.
Preheat the grill.
Toast the pita, so it starts to crisp on both sides.
Mix together the za'atar and olive oil, and then brush over the top of the bread. Crack an egg onto the pita (optional) and then pop it under the grill, until the egg is cooked. Garnish with Rooted Urfa Pul Biber and serve.
