GIZZI ERSKINE'S CLEMENTINE SPICED HOT CHOCOLATE
Clementine Spice Malted Hot Chocolate

A standard hot chocolate is simply sweetened cocoa and milk, but we can do better than that. For a hot chocolate of epic proportions you need cocoa powder and real chocolate as well as whole milk, malt powder, clementine peel and Rooted Spice’s Christmas Spice.
It’s imperative to have melty marshmallows bobbing around in the cup with a further grating of more real chocolate. I’m not messing about here – just wait and see how good it tastes. Of course, you can bung a shot of brandy or whisky in here too if you want to make it even racier.
Serves 2
Preparation time: 5 minutes
Cooking time: 5 minutes
600ml whole milk
2 tbsp Horlicks
1 tbsp cocoa powder
5 tbsp milk or dark chocolate, (depending on how rich you like it –I’m a child so go for milk) grated or cooking buttons
½ tsp cornflour
Pinch of salt
3/4tsp Rooted Spices’ Christmas Spice Blend
½ tsp seedy vanilla extract
1 tsp clementine zest (about 2 clementine’s worth)
To garnish: Mini marshmallows, grated chocolate
Melt everything together in a small pan, whisking with a small sauce whisk if you have it or a wooden spoon if not, until it starts to thicken.
As it reaches a simmer the liquid it will thicken slightly from the corn flour.
Pour it into two mugs, and top with as many of the marshmallows that will fit and the grated chocolate.
Serve immediately!
