When you’re barbecuing it’s easy to get distracted by steaks and chops – but sometimes the most delicious mouthful can come from a cheeky side. ‘Elotes’ is popular street food in Mexico. There’s sweetness from the corn, fruity heat from the chilli and sharp lime ... it’s so easy to throw together and could well be the most delicious part of your barbecue spread.
Simmer or steam the corn for five minutes, so the corn is plump and golden.
Brush the melted butter over the ears of corn, and griddle on the barbecue so the corn takes on a smoky flavour and is flecked with black char.
Top with chilli (/chipotle) mayonnaise, sprinkle with house blend and then finish with a squeeze of lime and dash of salt.
