When it’s sweltering outside, there are few more refreshing sides than this courgette and feta salad. The sharp but gentle heat of the Rooted House Blend laces it with authentic Turkish flavour. Go the whole hog with a barrel aged feta — if you can get your hands on any — you really will taste the difference.
Courgette and Feta Salad
2 tbsp olive oil
½ tsp Rooted black pepper, freshly ground
125g feta cheese
1 tsp Rooted House Blend
4-6 sprigs of mint, picked
Use a vegetable peeler to create long strips of courgette ribbons (peeling lengthways).
To make the dressing, grate a little lemon zest into a mixing bowl and add the juice of half a lemon and the olive oil. Add the black pepper and a pinch of salt (optional).
Toss the raw courgette ribbons through the dressing, until they are coated.
Crumble the feta through the salad, and then garnish with torn mint leaves and Rooted House Blend.
