Cheese on toast is such a ‘go to’ dish … but a tin of Shichimi Togarashi in your store cupboard will take this to the next level. The fiery Japanese spice blend stands up to extra mature Cheddar making this a killer snack which takes just minutes to rustle up. I’ve gone for both Red Leicester and Extra Mature cheese – but obviously this is a fridge raider kind of dish and go with whatever variety you’ve got to hand.
Gizzi Erskine’s Shichimi Charged Cheese on Toast
1 spring onion, finely sliced
25g extra mature Cheddar, grated
25g Red Leicester, grated
½ tsp Rooted Spices’ Shichimi Togarashi
Turn on the grill and bring it up to temperature.
Toast the bread, and meanwhile slice the spring onion and grate the cheese.
Put the toast on a baking tray, then heap on the cheese, spring onions and finally the Shichimi Togarashi. Grill until the cheese has melted and enjoy while hot!
